I always like to keep certain things in my fridge. Especially for my little girl so she has tasty, healthy foods to snack on. This is why my Healthy chocolate banana cake is perfect. I have tried lots of different recipes for banana bread/cake and I can honestly say, in my opinion, I find it much better pouring my mixture into a cake tin.

If you prefer the banana cake without the chocolate then it will still taste as yummy.

When i make this, I put the slices in to a sealed container and it stays fresh for up to 2 weeks :)))

This recipe is quick, easy and tastes delish. 

Makes 10 triangle slices

  • 3 ripe bananas (2big bananas)
  • 1 cup oat flour (or a gluten free alternative healthy flour) 
  • Half cup nut flour (almonds, walnuts, hazelnuts, brazil nuts, cashew nuts) any of these will do
  • Tsp of natural coca powder (optional) 
  • 1 tsp coconut oil (melted)
  • 120ml of milk (full fat, almond or coconut)
  • x1 egg (optional if vegan) 
  • Vanilla essence 1 tsp (optional)
  • cinnamon 1\2 small tsp
  • ginger 1\4 small tsp
  • nutmeg  1\4 small tsp
  • Heaped tbsp of chai seeds (optional)  
  • 85% dark chocolate, cut into bits and mix into the mixture, I also sprinkle some on top when it is in the cake tin (optional) I use about 40-60g

pre heat oven to 170* fan oven and prepare a 8-10inch round cake tin lined with grease proof paper or coconut oil.

Put all the dry ingredients (apart from the 85% dark chocolate) into the food processor until a fine consistency. Add the bananas, coconut oil, milk, egg and vanilla essence. Mix until all combined then pour in half the mixture in to the tin, sprinkle some dark chocolate, pour in the other half and sprinkle the remaining dark chocolate on top of the mixture.

Put in to the oven for 25-35 minutes (check after 25 minutes). You will know when its done by using a knife to test the middle of the cake, when you pull the knife out it should be quite dry, not wet. Then leave out on the counter, cover with some tin foil and leave until completely cool. 

Once it has completely cooled, cut in to slices.

*I like to put mine in the microwave for 15seconds (or until warm) With a side of natural greek yogurt and a squeeze of honey.*
